Chicken Do Pyaza

Chicken cooked with plenty of onions, one of the more intricate chicken dishes that I make.

Serves = 4

Cooking/PrepTime = 1hr/2hr

Ingredients

Marination

1. Mix Cumin seed (jeera) powder, red chilli powder and lemon juice into a paste

2. Apply the paste to the chicken chops, cover the chicken with cling wrap.

3. Keep the bowl in the fridge.

Curry

Part 1

1. Heat 1.5 cups of Ghee in a pan (Fry 8 slit green chillies and keep aside)

2. Add chopped green chillies (4 nos), roughly chopped onions (8 nos) and Ginger (4" piece)

3. Saute till light brown

4. Drain cool and blend to paste

Part 2

1. Drain the ghee from the previous step, and heat again.

2. Add fenugreek seeds (2 tsp methi dana), sliced onions and mint leaves. Saute well

3. Add the chicken chops, saute till dry

4. Add coriander seeds and one fourth cup of water, bring to a boil, then simmer till dry.

5. Add pomegranate seeds turmeric powder, salt and half a cup of water. After the first boil simmer till almost dry.

6. Add garam masala, fried green chillies and coriander leaves.

7. Cover and cook on low heat for 5-7 mins.

8. Add paste from Part 1, mix well.

9. Cover and cook for 15-20 mins on low heat.

Serve: Mix 2 tbsp lemon juice, and server hot.

Notes:

1. Have substituted tamarind paste for pomegranate seeds.
